Maple Bacon Mini Football Cakes- The “Ultimate Guys’ Dessert”

Maple Bacon Mini Football Cakes are perfect for your game day buffet and tailgating parties.  I call them the “Ultimate Guys’ Dessert” because there is bacon in the cake and they look like mini footballs, but trust me, I don’t know a girl who doesn’t like these! Sounds strange at first…but they really taste like pancakes with maple syrup and bacon…delicious!!!

The mini football/egg cake pan can be found online. They are 4″ long and perfect half-football shape!

Maple Bacon Mini Football Cakes- The “Ultimate Guys’ Dessert”

Ingredients

*For cakes:*

  • 10 strips thick cut bacon
  • 1 1/3 cups all purpose flour
  • 2/3 cup cake flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 sticks butter, room temperature
  • 1/2 cup sour cream
  • 1 1/2 cups sugar
  • 3 eggs, room temperature
  • 1 cup milk, at room temperature
  • 2 tsp. vanilla
  • 2 1/2 tsp. maple extract (or 1 teaspoon maple flavor found at craft or cake stores or online)

*For the top of cakes:*

  • 1 1/2 pounds melting chocolate for fondue (found at craft or cake stores or on the internet
  • 2 tablespoons shortening
  • White icing for the decorations

Instructions

  1. Preheat oven to 350°.
  2. Grease and flour silicone half egg baking pans (found on the internet). Set aside. The "eggs" are about 4" in length and can easily double as mini footballs.
  3. Cook bacon in a large frying pan, using a paper towel to soak up excess fat so bacon doesn't burn quickly. Cook until browned. Drain on paper towels and dice when cool.
  4. Combine flour, cake flour, baking powde and salt in a medium-sized bowl. In a separate large bowl, cream the butter and sugar until fluffy and well combined. Add eggs and sour cream and mix well.
  5. Slowly start adding the flour mixture to the wet mixture and mix well until all is incorporated. Add milk and mix well. Add vanilla, maple and bacon and mix on high for about 1 minute.
  6. Spoon into mini egg baking pan, about 3/4 full. Place on baking sheet and bake for 17-19 minutes or until a toothpick comes out slightly clean. Repeat until the batch is finished if you don't have enough pans. Let cool completely before dipping in chocolate.
  7. Heat chocolate and shortening in a double boiler, being careful to not burn chocolate. Cut any uneven parts off the flat side of the "football". Using one hand, dip the round part of the football in chocolate and try to dip as far as you can without getting your fingers in the chocolate. Place each cake on a parchment-lined baking sheet and place in the refrigerator when all cakes are finished to harden chocolate. Using white icing with a single line tip, decorate the tops with football "laces".
