Watermelon, Nectarine Mint Coolers

Make a splash by bringing a tray of these out to the pool or backyard this summer, you will no doubt have yourself some happy campers.  We made our’s with adorable mason jars and red polka dot straws.

Watermelon, Nectarine Mint Coolers

Watermelon, Nectarine Mint Coolers

Ingredients

  • 4 cups watermelon cubes (1 1/2 pounds) pureed (or 2 cups watermelon juice if you don't like the pulp)
  • 2 lemons, juiced
  • 1/2 cup warm water
  • 3 Tablespoons sugar
  • 1 nectarine, sliced and then cut into chunks
  • watermelon wedges for garnish
  • 6 mint leaves, plus some for garnish
  • ice

Instructions

  1. Fill 2 glasses with ice.
  2. Dissolve sugar into warm water and add lemon juice. Mix into small pitcher with watermelon puree/juice.
  3. Pour juice mixture over ice and add 1/2 nectarine chunks and mint into each glass.
  4. Garnish with watermelon and mint. Enjoy!

    Looks fun! Mason jars make everything look fun! Even lemonade.
