Sweet Potato Grits with Maple Butter and Bacon | The Hopeless Housewife

You are going to love these Sweet Potato Grits with Maple Butter and Bacon! I live by the motto “everything is better with bacon” and these grits are proof that’s true! Now my new motto is “everything is better with maple butter”…this stuff is unbelievably delicious and so addictive.  It tastes like buttery maple candy but not too sweet, and it melts on your pancakes, waffles, toast and yes….even grits to make it even more incredible. I have a batch in my refrigerator just waiting to be spread on something and it seems to call out at me every time I open the fridge door!

Okay, enough about the maple butter and bacon, let’s talk grits. Creamy, cheesy, sweet and savory grits- I love them all…but I have to say my new favorite way to eat them is with sweet potatoes. Sweet potatoes are also packed with vitamin A and other nutrients so that is also a good excuse to add them into the mix.

*For the grits:*

  • 2 large sweet potatoes
  • 1 cup grits (regular or instant)
  • 3 cups chicken stock
  • 1 cup heavy cream
  • 3 strips of bacon, chopped
  • 12 leaves of sage, chopped
  • sea salt to taste

*For the Maple Butter:*

  • 1/2 cup maple syrup
  • 1 stick butter

  1. Start the sweet potatoes. Fork and bake the sweet potatoes at 425F for 45 minutes to 1 hour, until tender in the middle. After the sweet potatoes are roasted, cut them in half , scoop out the insides, and place into a bowl. Use an electric mixer to beat until smooth and fluffy. Measure out 2 cups of the mashed sweet potato and set aside.
  2. Make the maple butter: While the sweet potatoes are in the oven, bring the maple syrup to a slow boil in a small heavy saucepan until it reaches just before a soft crack (until it reaches a temperature of 232F). Immediately add in the stick of butter and whisk well until it's combined. After the butter has melted, place the mixture into a stand mixer and mix using the paddle attachment until smooth. Chill in the refrigerator for at least 15 to 20 minutes.
  3. Make the grits. Pour the chicken stock and heavy cream into a medium sauce pot and bring to a slow boil. Gradually add in the grits and stir occasionally until thick. After the grits have thickened (according to cooking times on the grits package), add the mashed sweet potato and salt to taste and stir. Garnish with the maple butter, bacon, and sage and enjoy.
