Split Pea with Champagne Soup


  • 1 lb green split peas
  • 1 ham shank or bone
  • 2 qts. water or chicken stock
  • 2 tsp salt
  • 1 cup finely chopped carrots
  • ½ cup chopped sweet potato
  • ½ cup chopped russet potato
  • 1 cup finely chopped celery
  • ½ tsp marjoram
  • 1 tsp dried basil
  • 2 cloves minced garlic
  • ¼ tsp pepper
  • ½ cup champagne


  1. Place slit peas and ham shank in a large pot with water/stock and salt. Bring to a boil, then lower the heat and simmer for one hour.
  2. Add the vegeatbles and herbs. Simmer soup for another hour. Remove ham shank o bone. Cut meat off and chop.
  3. Use an immersion blender or blender to blend the soup, soup should become thick. Add meat back to the soup mixture along with champagne. Bring soup back to a simmer for 15 more minutes. Salt and pepper to taste.
