Smoky Burger Sliders with Fried Pickles

Smoky Burger Sliders with Fried Pickles


*For Caramelized Onions:*

  • 1 large yellow onion, sliced thinly
  • 1 tablespoon unsalted butter
  • 1 teaspoon brown sugar

*For Sliders:*

  • 2 pounds 80%/20% ground beef
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 tablespoon Worcestershire sauce
  • ½ teaspoon fresh ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1/4 cup smoky BBQ sauce
  • salt and pepper for seasoning

*For assembly:*

  • 12 slider buns
  • 6 slices of havarti cheese, cut in half
  • 1/4 cup mayonnaise
  • 2 cups shredded iceberg lettuce (or your favorite lettuce)

For Fried Pickles:

  • Peanut or vegetable oil, for frying
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon cracked pepper
  • 2 cups sliced dill pickles, drained


  1. Heat a skillet over medium high heat. Add butter and onion to skillet and add sugar. Stir to combine. Stir occasionally until onions start to caramelize, about 5 minutes. Set aside.
  2. Start sliders. Preheat grill to high.
  3. Combine beef and all remaining ingredients for sliders in a large mixing bowl. Mix well to combine. Portion beef evenly to form 12 sliders. Set aside.
  4. Brush burgers lightly with olive oil the season lightly with sea salt and pepper.
  5. Place sliders on grill and close lid and cook for 3 minutes. Flip and place cheese on top of grilled side. Toast buns on grill.
  6. While sliders are grilling, start fried pickles. Heat oil in a large heavy skillet to 375 degrees, making sure oil is about 1/2" deep. Mix flour, cayenne pepper, salt and black pepper to medium sized flat bowl and mix to combine. Add half of the pickles to the batter and toss to coat. Remove from the batter using a slotted spoon, add to the oil one at a time. Fry until golden brown, about 1 to 2 minutes, turning over if top does not get fried. Remove and drain on paper towels. Return the oil to 375 degrees and repeat with the remaining pickles.
  7. Assemble sliders. Spread mayo on each bottom bun. Add lettuce, burger, caramelized onion and fried pickles. Serve.
