Roasted Fig, Pear and Brie Bruschetta


  • 1/2 stick butter
  • 1/4 cup sugar
  • 1 vanilla bean, sliced open and inside scraped out for mixture (or 1 tbsp vanilla extract)
  • 2 ripe pears, cored and sliced
  • 4-5 figs, cut into 6 slices lengthwise
  • dash kosher or sea salt
  • 1 baguette
  • olive oil for brushing
  • Garlic powder and salt to taste
  • 8-10 ounces double creme brie, sliced into 1/4" slices, and cut short enough lengthwise to fit on baguette slices


  1. Preheat oven to 450 degrees.
  2. Melt the butter in an oven proof saute pan over medium heat. Add sugar and stir until dissolved. Add vanilla and pears. Saute pears for 3-4 minutes until they begin to soften. Add figs and cook another 2 minutes. Add a dash of salt and stir. Place pan in the oven. Roast for about 7-8 minutes.
  3. While pan is in the oven, slice and prepare the baguette. Slice baguette into 1/4- 1/2 slices on a diagonal to make crostinis. Brush lightly with olive oil, and lightly sprinkle garlic powder and garlic salt over the top. Set aside.
  4. When pears are tender, remove from oven.
  5. Turn oven up to broil.
  6. Place sliced baguette under the broiler until bread is lightly toasted (watch this carefully! I have burned these many times walking away for even a minute!). Remove from oven. Immediately put brie slices on top of the crostinis.
  7. Spoon fig and pear mixture over the crostinis and brie, and serve.
