Pan-Roasted Apple and Brie Grilled Cheese

Yield: Makes 2 sandwiches

Pan-Roasted Apple and Brie Grilled Cheese


  • 1 Granny Smith apple, cored and sliced thinly
  • 2 teaspoons butter
  • 1/2 teaspoon sugar
  • dash salt
  • 4 slices sourdough bread or baguette (or your favorite bread)
  • 4 ounces Brie, sliced
  • butter for grilling


  1. Heat heavy skillet over medium heat. Add butter, apples, sugar and salt. Sauté until apples are tender and are slightly caramelized.
  2. Lay bread out on cutting board or counter. Layer brie first on each side of bread, then place apples on one side of the bread only. Put top layer of bread and brie over apples. Butter top layer of bread on the outside. Using a new pan (or cleaned apple pan), place sandwich butter-side down in pan. cook until golden and chefs has started to melt. Butter top layer of bread while it's in the pan and flip over to grill second side. When both sides are golden and cheese is melted, remove from pan and serve. Cut into smaller pieces if you'd like to swerve as appetizers or eat a whole one for lunch!
