How cute are these?? You simply can’t be scared by these adorable frights that melt in your mouth, can you? They may look like they’re hard to make but don’t be intimidated; they are very simple to make. Boo!

These Meringue Ghosts are all a part of my Haunted Mansion Graveyard Halloween Party Table that was recently featured on Hostess with the Mostess!

Makes 10 large or 20 small ghosts

Meringue Ghosts

Meringue Ghosts


  • 4 large egg whites at room temperature
  • ½ teaspoon cream of tartar
  • 1 cup of superfine baker’s sugar
  • ½ teaspoon vanilla extract
  • ½ cup mini semi-sweet chocolate chips or ¼ cup black buttercream frosting for the eyes


  1. Preheat oven to 200° F. Place the rack in the center of the oven. Line baking sheet with parchment paper. Fit pastry bag with ½” to 1” plain tip. Size of tip depends on the size of the ghost you are wanting to achieve.
  2. Using the whisk attachment on the electric mixer, beat the egg whites and cream of tarter on medium speed until foamy. Add the sugar, a little at a time, allowing the sugar to completely dissolve before adding more. Continue to beat until the meringue holds very stiff peaks, about 5-6 minutes. Beat in the vanilla extract.
  3. Transfer the meringue into the pastry bag. For smaller ghosts pipe 2 inch high mounds of meringue. For the taller ghosts pipe 4 inch mounds of meringue. If you choose to use chocolate chips for the eyes, now is the time to place them where you’d like for the eyes. Bake the meringues for about 1 ½ hours or until they are dry and crisp.
  4. If your meringues start to crack and turn brown while baking, turn down the temperature of the oven. Remove from the oven and let cool and dry for at least one hour. If you are using black frosting for the eyes, once ghosts are dry you can pipe on eyes with black buttercream.
