Grilled Mexican Corn

Grilled Mexican Corn will be the star of your backyard barbecue and neighborhood picnics! With zesty lime and cilantro flavors it will be loved by all!

Grilled Mexican Corn


  • 4 ears of corn, silk removed but husks still on
  • 2 tablespoons butter, room temperature
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 teaspoon lime zest
  • 1/4 cup Cojita or parmesan cheese
  • 1/2 tsp ancho or cayenne pepper
  • 1 lime, cut into wedges
  • coarse salt and pepper to taste


  1. Preheat grill to high heat. Peel back the corn husks back, remove the silk. Brush corn with butter.
  2. Put the corn on the grill with husks pulled back, positioning the husks so they are off the grill so they won't get too charred. Grill 3-4 minutes per side, turning corn when it looks slightly charred, continue to turn to make sure corn is cooked evenly.
  3. While corn is grilling, mix together the mayonnaise, sour cream, cilantro and lime zest. Set aside. When corn is cooked, slather it with the mayonnaise mixture. Sprinkle with cheese, then ancho or cayenne powder then salt and pepper to taste. Serve with lime wedges.
