English Cucumber Sandwiches

English Cucumber Sandwiches


  • 1 English cucumber, peeled
  • 8 slices brown bread, crusts cut off
  • 8 slices white bread, crusts cut off (you may also choose to do this with all white bread if anyone is picky with their bread!)
  • 8 oz cream cheese, softened
  • 2 teaspoon finely chopped dill
  • salt and pepper


  1. Slice cucumber in paper-thin rounds. Salt rounds.
  2. Spread sliced bread with softened cream cheese. Put 2 layers of cucumber slices on bottom slice, sprinkle with finely chopped dill, salt and pepper to taste, and top with another buttered slice. Press lightly with palm of hand.
  3. Cut sandwiches in half diagonally and then again into quarters.
  4. Serve in alternate rows of brown and white bread sandwiches.

    I <3 cucumber sandwiches but I've never tried them with dill. It's like the most brilliant obvious idea I never thought of.Thank you for bringing this to my attention!
