Creamed English Peas with Pearl Onions

Creamed English Peas with Pearl Onions


  • 3/4-1 cup pearl onions, peeled (cut in half if too large)
  • 2 cups fresh English peas (frozen may be substituted but reduce cooking time for peas to 2 minutes)
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • Salt and ground white pepper to taste
  • 1 cup half & half
  • 2 teaspoons sugar


  1. Bring a saucepan of salted water to a boil. Add pearl onions to the water and let cop for about 5 minutes. Add the peas and cook for about 4 more minutes. Drain pearl onions and peas then set aside. In the same saucepan, melt the butter over medium heat. Add the flour, salt, and white pepper and whisk together until smooth, 1 to 2 minutes. Add half & half, reduce the heat to medium-low, and then add the peas, cooking until thickened and peas are softened, 10 to 12 minutes.
