“Cracker Jacks” Brownies with White Chocolate

This brownie is so rich and moist with crunchy caramel corn inside…it will have you doing “the wave” after each bite!

“Cracker Jacks” Brownies with White Chocolate


  • 4 squares of unsweetened chocolate
  • 2 sticks sweet butter
  • 2 cup of sugar
  • 1/2 cup of walnuts (optional)
  • 4 eggs
  • 1 1/2 tsp. vanilla
  • 1/2 cup plus 2 tablespoons flour (yes, this amount is correct!)
  • 2 tsp. salt
  • 2 cups caramel corn (divided in half)
  • 2 ounces white chocolate


  1. Melt unsweetened chocolate and butter in a heavy sauce pan.
  2. Remove from heat and stir in sugar. Add eggs along with vanilla and hand-beat.
  3. Stir in flour, salt, walnuts (optional).
  4. Fold in 1 heaping cup up of the caramel corn.
  5. Butter a square pan (8×8 inches, or you may use a 9 x 12 inch pan if you'd like brownies to be a little less thick, reduce baking time by 10-15 minutes) and pour batter into pan. Bake in a 325 degrees oven for 50-55 minutes (check to make sure the center is not too gooey by poking a knife into the center- you DON'T want it to come out clean, brownies will be overdone- but you also dont want any liquidy batter). Take out the pan and cool completely.
  6. Sprikle top of brownies with remaining caramel corn.
  7. Melt white chocolate in a double boiler. Transfer to a measuring cup and drizzle white chocolate over the brownies. Cut into 2 inch squares (use a sharp knife to cout through caramel corn, or choose cuts that avoid them). Serve.
