Chicken Parmesan Grilled Homerun Hoagie

Ingredients

Sauce:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup white onion, chopped
  • 3 vine-ripened tomatoes, seeded and chopped
  • 1 1/2 tablespoons tomato paste
  • ½ teaspoon oregano
  • ½ teaspoon red pepper flakes (optional)
  • Salt
 to taste
  • 1/4 teaspoon sugar

For the chicken: 


  • 1 boneless, skinless whole chicken breast
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup flour
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • 1 egg
  • 1 tablespoon olive oil
  • 1/2 cup bread crumbs
  • 1/4 cup Parmesan cheese

For the sandwich: 


  • Fresh mozzarella ball, sliced into 6 rounds
  • 2 French Deli Rolls
  • Olive oil or butter for grilling
  • 6 leaves of fresh Basil, torn

Instructions

Sauce:

  1. Sauté the onions and garlic in olive oil until soft. Add the tomatoes, tomato paste, red pepper flakes and dried herbs. Cover and simmer for about 20 minutes. Remove lid and simmer a bit longer to allow sauce to thicken. Season with salt and sugar.

Chicken:

  1. While the Sauce is cooking, tenderize and pound chicken breast to about ¼ inch thickness and cut into pieces that are the size of French rolls.
  2. Combine flour, salt and dried herbs. In a different bowl, whisk egg and olive oil. In a third bowl, add bread crumbs . Dredge each piece of chicken in the flour, then the egg wash, then the bread crumbs and place on baking sheet. Sprinkle with parmesan. Bake at 375 degrees for about 15 minutes.
  3. Assemble sandwiches by placing chicken, tomato sauce and mozzarella cheese on the French roll. Grill on medium heat until bread is lightly toasted and cheese is melted. You can use a bacon press or something slighlty heavy to hurry this process along. Add fresh basil and serve.
