Butter-Pecan Sweet Potatoes

Yield: Serves 6-8

Butter-Pecan Sweet Potatoes


  • 6 medium sweet potatoes
  • olive oil
  • sea salt to taste
  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 1/3 cup pecan pieces, chopped
  • dash cayenne pepper


  1. Preheat oven to 400 degrees.
  2. Peel sweet potatoes and slice into 1/4" rounds, then quarter those rounds. Place in glass bowl and add olive oil. Toss sweet potatoes until they're coated.
  3. Transfer sweet potatoes to a baking sheet, you may need two if there are too many to fit single layered on one sheet. Roast about 20-25 minutes, until potatoes are tender (it's a good idea to turn potatoes over half way through).
  4. While sweet potatoes are roasting, melt butter, brown sugar, pecan pieces and cayenne pepper in small sauté pan. Pour over sweet potatoes when they come out of oven. Place under broiler for 1-2 minutes (watch carefully!). Toss the potatoes and transfer to serving dish.
