Burrata with Pan-Roasted Butternut Squash and Figs The Hopeless Housewife

Try and tell me burrata is not the most luscious, buttery, silky cheese on the planet. Oh my….give me a plate of this spectacular delight and it is gone in minutes. Out of all the wonderful things about burrata, the fact that you don’t have to do much to it to serve up an amazing dish is also a huge plus. If you aren’t familiar with it, I suggest you find a store in your area that has it and try some…fast! It’s fresh mozzarella on the outside and mozzarella mixed with cream and tied up in a nice little ball.  You are going to love this Burrata with Pan-Roasted Butternut Squash and Figs.

 

Yield: 2 servings

Burrata with Pan-Roasted Butternut Squash and Figs

Ingredients

  • 8 ounce ball of burrata cheese, at room temperature
  • 1 tablespoon butter
  • 1/2 cup diced butternut quash
  • 6 figs, quartered

Instructions

  1. Place burrata on a serving dish.
  2. In a small sauté pan, heat the butter over medium heat, add butternut squash and sauté until tender and browned. Remove from heat. Let cool for a minute or two and sprinkle over burrata. Place figs around the burrata and serve with crostini.
