Buffalo Chicken Lettuce Wraps The Hopeless Housewife

 

I could eat a tire if you coat it with enough buffalo sauce, I am kind of obsessed with it for some reason. I love spicy foods and that just may be why I polish of a plate of hot wings in a few minutes flat while my husband sits with his jaw open in shock. It’s one of the reasons I look forward to watching football, all the things I can make with buffalo sauce and get away with it.

Are you watching football this weekend and want to pig-out out game-day food without the guilt? Well, these Buffalo Chicken Lettuce Wraps are right up your alley. While they might not be fat-free (butter in the sauce), they aren’t fried and that’s a big plus when it comes to game-day food.

 

Yield: 12-14 lettuce wraps

Buffalo Chicken Lettuce Wraps

Buffalo Chicken Lettuce Wraps

Ingredients

  • 2 small boneless, skinless chicken breast halves
  • Sea salt and pepper
  • 1/2 tablespoon olive oil
  • 3/4 cup Frank’s Hot Sauce (or Louisiana Hot Sauce)
  • 1/4 stick butter
  • 1 teaspoon red wine vinegar
  • sea salt and pepper to taste
  • 2 carrots, julienned
  • 2 stalks of celery, diced
  • 10 Butter lettuce cups, rinsed and pat dry
  • 1/4 cup crumbled blue cheese

Instructions

  1. Start the chicken. Pound chicken breast out until about ¼ inch thick then season both sides with salt and pepper. Heat olive oil in grill pan. Once pan is hot, place chicken in pan and grill on both sides, about 4 minutes on each side. Dice chicken and set aside in a small bowl.
  2. Start the sauce. In a small saucepan, combine hot sauce and butter and heat until simmering. Season to taste with salt and pepper. Toss chicken in sauce. Add carrots and celery and toss to coat. Scoop into lettuce cups. Serve with blue cheese on the side.
