This is a fun twist on your traditional banana bread recipe. My Rum Banana Bread with Sour Cream is fluffy and delicious and is topped with a streusel topping.

Ingredients

  • 3 ripe bananas
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/4 cup applesauce
  • 3/4 cup sour cream
  • 1/4 cup rum
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • For topping:
  • 1/3 cup butter
  • 1/3 cup flour
  • 1/4 cup sugar

Instructions

  1. Preheat oven to 350º
  2. Mash all bananas. Set aside. Cream butter and sugar in a large bowl. Add eggs and vanilla. Beat until blended. Add applesauce, sour cream and rum and continue to blend. In a small bowl sift dry ingredients together for the bread then incorporate into wet mixture. Fold in mashed bananas.
  3. Using a pastry cutter, cut together the butter, flour and sugar for the streusel topping. Pour batter into a greased and floured loaf pan. Top with streusel topping and bake for 50 minutes to 1 hour.
  4. Remove from oven and cool.
