Banana Bread

    Ingredients

    • 2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • ½ teaspoon ground cinnamon
    • ½ cup butter, softened
    • ½ cup brown sugar, packed
    • ½ cup sugar
    • 2 eggs
    • 3 medium bananas, ripe & mashed (about 1 cup)
    • 1/2 cup sour cream
    • 1 teaspoon vanilla extract
    • 1 cup walnuts, chopped & toasted (optional)

    Instructions

    1. Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, salt and cinnamon in a medium bowl; set aside.
    2. Beat butter, brown sugar and sugar in large bowl until light and fluffy. Beat in eggs. Beat in bananas, sour cream and vanilla until blended. Add flour mixture; beat until just blended. Stir in nuts.
    3. Pour into 9 x 5-inch baking pan coated in cooking spray. Bake for 50-55 minutes or until toothpick inserted in center comes out almost clean. Cool in pan 10 minutes.
