Balsamic Strawberry Shortcake Trifles with Basil-Infused Whipped Cream

Strawberries and balsamic vinegar are a match made in heaven. Add basil to the mix and it really kicks things up a notch! I combine all these flavors along with shortcake to make a perfect dessert. I found really cute mini trifle cups on Amazon to make this wonderful dessert into a trifle. Balsamic Strawberry Shortcake Trifles are a perfect summer dessert!

Balsamic Strawberry Shortcake Trifles with Basil-Infused Whipped Cream

Ingredients

*For the whipped cream:*

  • 1 pint heavy cream
  • 15 large basil leaves, chopped
  • 3 tablespoons confectioners' sugar
  • 1 pint heavy cream

*For the shortcakes:*

  • 2 cups flour
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 tablespoons sugar
  • 1/4 cup butter, room temperature
  • 3/4 cup half and half
  • Melted butter to brush shortcakes

*For the berries:*

  • 2 pints strawberries, rinsed and sliced
  • 1 1/2 tablespoons balsamic vinegar
  • 3 tablespoons sugar
  • 1 pint blueberries for the top

Instructions

  1. Make the whipped cream. Heat heavy cream and basil leaves over medium heat and simmer for 5 minutes. Remove from heat and cover for 10 minutes. Strain through a fine sieve and chill in refrigerator until very cold, at least 3 hours.
  2. Make the shortcakes.
  3. Heat oven 450 degrees.
  4. In a large bowl, combine flour, baking powder, salt and sugar. Cut in butter. Mix in half-and-half until combined, but do not over-mix. Drop by large spoonfuls onto a baking sheet to form 6 shortcakes. Brush with melted butter. Bake for 15 minutes or until golden. These are best when served within 3-4 hours maximum.
  5. Make the strawberries. In a small mixing bowl, combine sliced strawberries, sugar and balsamic vinegar. Chill. Leave blueberries for the top.
  6. Whip the cream. Put the chilled basil-infused cream into a bowl and whisk with confectioners' sugar. Beat with electric mixer until soft peaks form.
  7. Assemble shortcakes. Layer shortcake, whipped cream, then strawberries, then shortcake, whipped cream then blueberries to top it off. You can layer this in trifle cups or in bowls or a small plate. Serve immediately.
