Apple-Stuffed Swedish Pancakes | The Hopeless Housewife

 

 

These pancakes are my favorite- crispy and eggy, so delicious!

Apple-Stuffed Swedish Pancakes

Ingredients

  • 2 eggs
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 3 heaping tablepspoons flour
  • 2 granny smith apple, finely diced
  • 3 tablespoons butter
  • 2 tablespoon sugar
  • butter for cooking
  • powdered sugar for garnish
  • Serves 4
  • in a medium-sized bowl, beat eggs with vanilla and salt. and milk and combine well. Whisk in flour, but don't over-mix, batter will be slightly lumpy. Set aside.
  • In a small skillet, heat apples, butter and sugar over medium heat. Bring to a bubble and cook until apples are tender. Lower heat to low and start cooking Swedish Pancakes.
  • Heat a small pat of butter in a small nonstick skillet until it sizzles. Add about 1/4 cup of the mixture and tilt pan to coat evenly. Cook until golden brown, about 2 minutes per side. Spoon small amount of apple mixture in the center and roll pancake up. Sprinkle with powdered sugar and serve with jam if you wish!

  • I love crepes. My FIL makes the best ones. My youngest would never eat them, but if he saw you could eat them with apples, he just might.
