Doesn’t this chilly weather call for a nice big bowl of steaming hot goodness? Well, The Best Chicken and Dumplings is definitely the answer for me today. There is something that just screams back to my childhood when I eat those cute little fluffy balls of dough swimming in that hot and flavorful broth…YUM. In my younger years I always thought this would be really hard to make…but honestly, they are very easy. There are a few steps here but nothing crazy. And believe me, this dish is SO worth any effort it takes to make them.

Speaking of making chicken and dumplings, I always make mine in my favorite Le Creuset Dutch Oven. I waited until I was a mature adult before I invested in one of the babies and BOY OH BOY are they just awesome to cook in.  Oh. MY. There are no words for how delicious these cinnamon rolls are. These are BETTER than Cinnabon- super moist and so flavorful!  When I see Cinnabon copycat recipes on the internet I think about how similar these are but mine are a little different. I use scalded milk. Why? Well, my grandmother used scalded milk and that’s the only way I have ever made them. I remember making a version of these when I was a kid and I used the HOT scalded milk…needless to say my cinnamon rolls did not rise and it was a major disaster. I also use a little more salt in the dough to enhance the flavor and cut the sweetness a little. Then of course is the apple filling. Once again, Oh. MY. These are the cinnamon rolls you dream about- gooey in the center, with a cream cheese frosting. Now add the tart apples and this is a serious cinnamon roll.

I always make these Apple Pie Cinnamon Rolls the day before Christmas and heat them up Christmas morning… they are always a huge hit in my house and disappear instantly!

Apple Pie Cinnamon Rolls

Yield: Makes 12 cinnamon rolls

Ingredients:

For the dough:
1 package yeast (2 1/4 teaspoons)
1/2 cup lukewarm water
1/2 cup sugar
1/2 cup scalded milk, cooled to warm
1/3 cup melted butter
1 egg, room temperature
2 teaspoons salt
4 cups bread flour (or all-purpose flour)
Filling:
6 tablespoons melted butter, divided
5 granny smith apples, peeled, cored, and diced
1/2 cup sugar
1 cup brown sugar
2 tablespoons ground cinnamon
Glaze:
1/4 cup cream cheese, softened
4 tablespoons butter
1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Instructions:

In a small bowl, add yeast and 2 teaspoons of the sugar to the lukewarm water and let it sit until it dissolves, about 10 minutes. In the mixing bowl of a stand mixer using the dough hook attachment, (or a large mixing bowl with an electric mixer) add scalded milk, melted butter, egg, remaining sugar, and salt and mix on low speed until combined. Add half of the flour and mix until smooth. Add yeast mixture and continue to mix on low. Slowly add the remaining flour (if using an electric mixer you will have to stop when it's getting hard to mix and use a wooden spoon to incorporate the rest of the four as best you can- the motor of the electric mixer will burn out- then turn dough to a floured surface and knead for 5 minutes, folding the dough over onto itself and pushing down repeatedly). For a stand mixer, increase the speed to medium and knead for 5 minutes. Remove dough, place in a greased bowl, cover, and set aside on countertop or warm place. Let it rise until it is double in size, about 2 hours.
While dough is rising, make the filling. Heat 4 tablespoons of the butter and sugar in a large skillet, then add the apples. Sauté until apples are slightly caramelized. Remove from heat and set aside.
When dough has risen, remove cover and, using your fist, punch the dough down and remove from the bowl. Roll out on a well-floured surface into a 16x24 inch rectangle and spread the remaining 2 tablespoons butter almost out to the edges, but not quite. Mix the brown sugar with the cinnamon and sprinkle evenly across the butter. Spread the apple mixture over the brown sugar as evenly as you can. Roll into a log, starting from one end to the other, lengthwise, so the log is 24 inches. Cut 2 inch slices, this will give you 12 cinnamon rolls.
Line a 9x13 baking pan with parchment paper and butter the parchment. The cinnamon roll slices close together, but not touching, in the pan. Cover with plastic wrap and let rise until the dough is doubled, 1 1/2-2 hours.
While the rolls are rising, preheat the oven to 375°F. Bake for about 20-22 minutes, being careful not to over-bake them.
While the cinnamon rolls are baking, mix cream cheese, butter, powdered sugar, vanilla, and salt together with an electric or stand mixer on medium speed and set aside. When cinnamon rolls come out of the oven, spread the glaze over the top and serve.

I could eat these everyday…crispy, flaky and tender fish topped with tangy slaw, tomatillo salsa, spicy pico de gallo, cool and creamy herb lime mayo and of course guacamole! I think mexican food is my favorite and this recipe sure helps keep me a fan for life.

You can make your own tortillas if you have the extra time it’s pretty easy with just two ingredients-  masa harina (corn flour) and water. A little work kneading, rolling or pressing the tortillas then toss on a hot cast iron pan. If you are not feeling adventurous or you don’t have, the time store-bought tortillas are great too!

Is it Sunday morning yet? These are SO yummy and easy I could make them almost every day of the week, actually!

Buttery, flaky pastry filled with tart apples and a sweet buttery caramel sauce…bring it on. This brings me back to my childhood SO much I can’t even tell you…on cold winter mornings when my mom would pull these out of the oven my sister sand I would run to the kitchen and fight over who got which one. My sister usually won most every contest of strength and will (ask me sometime about Easter morning when I was 6 when she “took” the best Easter basket and teddy bear then taunted me about it for 15 years) so she always got the gooiest one. Love you Kristin!

Enough nostalgia, back to the turnovers. These are SO easy to make with the help of some pre-made puff pastry dough. The hardest part is the peeling/coring/slicing of the apples, which isn’t too bad. Happy Saturday!

Everyone who knows me knows me knows I love a great lemon drop martini, and if you come to my house for a cocktail party, chances are you will probably be having one yourself! One of my tricks is to shake the martini shaker like mad and use lots of ice in your shaker– it makes these extra frosty and delicious!

Classic Buffalo Hot Wings - The Best! | The Hopeless Housewife
It’s no secret that I am a sucker for anything that has buffalo sauce on it…I think I have said before that I would eat an old tire if I smeared it with that delicious spicy sauce. I try to put it in anything I can, pizza, lettuce wraps, chicken tenders, sandwiches…slather on that sauce and I am a happy girl. Well, this is where the love originated. This easy, simple recipe.
I LOVE game-day food and hot wings are always at the top of my list to make when it’s football season. My husband and I always make these together, I am on the sauce duty and he is on the frying duty. This classic recipe is SO simple and these are truly delicious- they’re crispy, with tender, moist chicken and a tangy spicy sauce. I always find a butcher that carries fresh chicken drumettes and I ask them for the meatiest ones they have- it makes such a difference. We are a ranch dressing family so I always serve mine with ranch and super cold celery and carrot sticks that I soak in ice water to make them crispy and crunchy.
I use Frank’s Hot Sauce but there is also Louisiana Hot Sauce, it’s a matter of preference but many will tell you that Frank’s is the best!

Salt-Crusted Mini Beef Wellingtons 3 | The Hopeless Housewife

I love these so much, I could eat a few for dinner and call it a night! The crystal salt flakes baked on the crust make these Mini Beef Wellingtons even more delicious, and they practically melt in your mouth! The duxelles (finely chopped mushrooms, shallots, herbs and butter) are incredibly flavorful and seems to just melt into the pastry. Did I mention how easy they are? Enjoy!

I can almost eat a whole milk carton sized box of Whoppers in a sitting..I know- HORRIBLE for me but I love them so much!  Sit me in front of a movie with popcorn and Whoppers and watch out!

Knowing my love for this delicious specimen of a candy, is it any surprise I made a Whoppers Malted Hot Chocolate? Seriously, this is like drinking a Whopper, yikers! I used to put malt powder in milk when I was a kid and I LOVE that flavor, it works so well in this hot chocolate.  And, come on… this cold weather is screaming for a drink like this, so indulge.

Candy Cane Chocolate Truffle Meringues 12 | The Hopeless Housewife

Well, at this point it’s obvious I love candy canes. Funny, I don’t love to sit around eating a whole candy cane but I love crushed candy canes mixed in things and sprinkled on things…they are crunchy and like eating a little piece of winter, I love it! These Candy Cane Chocolate Truffle Meringues are also like eating a little piece of winter…on a cloud!! They look hard to make but really- they are quite simple. Just a few ingredients but there is a little bit of baking and waiting time so plan accordingly. These WILL impress at your Christmas function or holiday party so they’re worth it!

Ahhh…Mexicorn. A favorite from my childhood. I LOVED Mexicorn and could eat it by the canful growing up. I don’t eat it really at all now except for in this delicious dip on game day.   You could easily make your own Mexicorn- it’s simply corn with red and green peppers seasoned with salt and sugar.

This Cheesy Mexicorn Dip  is one of those dips that you put out and it’s gone in a few minutes. People love this combo of meat with creamy, cheesy corn. Just when you think you’re full, you can help but go back for  more! (more…)

I just finished almost an entire plate of these, I couldn’t stop myself!  Um, my belly is kind of TOO full…but it was worth it. I smothered them in jalapeño cream cheese and it was the perfect way to watch a game. I have my usual game-day favorites and now this is added to the top of my list. They are cute and little, cheesy and delicious. A perfect game-day or after-school snack, really.

Okay, let’s talk about how easy these Chicken Enchilada Mini Chimis are to make- I use egg roll wrappers to make it even easier.  I use a green enchilada sauce for the chicken and it works SO well in this crispy little chimi. Nothing is overly complicated or takes too much time.

Growing up in Southern California, I wound up eating at Mexican food restaurants a lot- they are everywhere…and it’s a good thing because it’s one of my all-time favorite foods to eat (and make). I used to always have a bowl of homemade salsa in the refrigerator and can whip up a MEAN guacamole on cue. Just ask me to do it the next time you see me. I’ll do it.  Homemade refried beans? No prob. Easy peasy. Enchiladas? Simple. But tamales…oh no, they are WAY to time consuming for me to take on. That is why I came up with this super easy and delicious recipe.

I have a real problem. It’s serious. I LOVE food that reminds me of being a kid…a little TOO much, it’s almost to the point of being…well, childish. But how can anyone resist anything that has marshmallow in the title? The temptation is just a little too much for me. I start thinking about toasting marshmallows over an open fire, my fingers coated with sticky marshmallow goo that seemed to always get in my hair, all over my clothes and everything I stood near. I think I’d rather have a s’more than almost any other dessert on the planet. That combo is golden. Now throw in some peanut butter and you have this cute little dessert. There is no gooey chocolate and graham crackers- instead there is a chocolate crust with a peanut butter center and a marshmallow cheesecake to top it all off, just an incredible combination. The cheesecake stiffens quite well for a no-bake cheesecake because of the gelatin. Whenever I make these Peanut Butter No-Bake Marshmallow Cheesecake Bars, they quickly disappear, they are delicious! And a trip down memory lane.

I have. The turkey is the centerpiece of this great holiday so why not take a little extra time ahead of time to make it spectacular?  This is the ultimate moist and flavorful turkey. There is the double whammy of the brine and the herb butter, and a triple whammy if you decide to start with your turkey upside down for an even moister turkey! Try one, two or all three of the methods, and remember to have fun!

The one thing you have to remember when brining a turkey, your drippings will be saltier than if you didn’t brine, so you have to adjust accordingly (see gravy instructions below).

Well, bacon comes into the conversation yet AGAIN. But doesn’t this delectable strip of greasy goodness deserve a mention in most conversations? I think so. I mean, I REALLY think so. Raise your hand if you think bacon should be added to every dish. I am raising my hand.

I just strongly feel that bacon should be added to all meals to improve them immensely. Okay, okay I am joking…kind of. But I am not joking around when it comes to adding bacon to your green bean casserole…no siree bob. Then there’s the cheddar. Cheddar and bacon. A match made in heaven.

Now, do we really NEED to add all the extra fat and calories to our Thanksgiving staple? Probably not. But I am going to because I have a really good workout plan for the New Year. It’s left over from last year since I never did it..but this year I will for sure :-) .

In related news, here is our puppy’s first play date…they “totes” talked about bacon!

Anyway, enough about bacon and on to GREEN BEANS. If you are one of those people that doesn’t love vegetables this is the way to go…I know non-veggie lovers who devour this Bacon an Cheddar Green Bean Casserole with Crispy Shallots,  so give it a whirl.

Bacon Cheddar Green Bean Casserole 5 | The Hopeless Housewife

 

 

Bacon and Cheddar Green Bean Casserole

Ingredients:

2 lbs green beans, rinsed with tips cut off (or you could use three 10-ounce bags of french cut green beans)
5 slices of bacon, cut into 1/4-1/2 inch pieces
2 tablespoons butter, divided
2 shallots, chopped finely
8 ozs white mushrooms, sliced and chopped
3/4 cup half and half
2 cups whole milk
1/4 cup flour
1 1/2 cups mild or medium cheddar, shredded
2 teaspoons fresh thyme, finely chopped
2 teaspoons fresh sage, finely chopped
salt and pepper to taste
For topping:
vegetable oil for frying
2 shallots, sliced very thinly
1/2 cup flour
1 teaspoon salt
1/2 teaspoon black pepper
1 egg, beaten

Instructions:

Preheat oven to 350 degrees.
Steam green beans in a steaming basket over boiling water until tender, about 5-7 minutes. Set aside (If using frozen green beans, heat them according to directions and drain well and set aside).
Cook bacon pieces over medium heat until they are just starting to get crispy, about 3 minutes. Remove from heat and drain on paper towel. Drain half the fat from the skillet and add butter, shallots and mushrooms over medium high heat until liquid is released from mushrooms, about 5 minutes. saute until translucent.
In a large saucepan, add half and half, milk and flour over medium high heat. Whisk until smooth and cook until liquid has thickened, about 5-7 minutes. Add cheese and stir well to combine. Cook another minute and remove from heat. Stir in bacon, green beans, thyme and sage. Season to taste with salt and pepper. Pour into a ceramic or glass baking dish.
Make crispy shallot topping. Heat 1-2 inches of oil over medium high heat (to about 375º) in a large sauté pan. The oil will be hot, but not smoking.
Mix flour with salt and pepper. Separate shallots into rings. Dredge onions in egg, then flour mixture. Drop into hot oil until golden brown and crispy. Work in batches is necessary and drain on paper towel.
Sprinkle shallots over green bean casserole in baking dish and bake in the preheated oven for 25-30 minutes. Serve immediately.

Sausage Stuffing-Stuffed Jalapeños | The Hopeless Housewife

 Are you fully into the fall mode yet? We are in sunny Arizona so we aren’t getting that really cold weather, we are actually having what we call “fall” which feels like most people’s late spring but there is definitely a crispness in the air and we are starting to feel the holidays coming on. Just because it’s not truly cold doesn’t mean we aren’t getting cozy here BIG TIME. My hubby has been hauling wood from the edge of our property everyday to our fire pit and we have been enjoying the warm fire every night. Our new puppy always assists in the process…it’s become their “thing”. I am finding that they have a lot of “things” all of a sudden. They are two peas in a pod.

I just heard Oxford declared “selfie” as the word of the year for 2013. I’m not great at selfies but I think if I took one, it would look something like the photo above. I am a messy version of a classic dish. With food flying everywhere.

Okay enough of the cutest puppy in the world…Thanksgiving is a little more than a week away and I am already thinking about leftovers. In fact, I think I may like leftovers more than I like the actual dinner. My husband starts making turkey sandwiches on Thanksgiving night practically right after the turkey is put in the fridge so I think we all may just be wired that way over here.

This Turkey “Shepherd’s” Pie is another one of my mash-ups, a play on the traditional version which contains lamb. Got leftover turkey? Awesome. Got leftover mashed potatoes? Perfect. What about peas? All good. You may just have just about everything you need to make these suckers without having to go to the store after Thanksgiving. You can sit at home with a belly full of food like my family does waiting the the really full feeling to go away so we can eat more!!!

Ummmm, OMG. I can’t take it. Inside of me is a little kid who can’t walk by a sloppy joe, tater tot, s’more or mac and cheese without stopping and seriously considering eating it all before anyone can see me. This is in that category but I am now putting it out there for the whole world to see. A mash-up of two of my favorite kid foods. A cheesy sloppy joe pizza. YES. YES. YES. This has “me” written all over it. Just give me a side of tater tots and I am set!

Let me just tell you when I cooked this, it disappeared. Man, woman and child couldn’t resist! Now, will I cook this when the Queen of England comes over for dinner (I am still waiting for her to reply to my invitation)? I will have to think about that but I don’t think this would be on the top of my list. Or will it? Maybe when she sees this picture she will answer my evite! Either way, your children will be really happy if you make this. And listen, if you’re a big foodie you might just like this too. Just pour a glass of chocolate milk and let you mind go back to your childhood.

Cookbook Stand Giveaway The Hopeless Housewife

Okay this cookbook stand is GORGEOUS!! What a beautiful way to cook through your favorite foodie magazine or cookbook. Uncommon Goods has many unusual gifts and this is one of them.

It is made from reclaimed timber and salvaged galvanized tin, found in old buildings all though Europe. All I can say is that I have this in my kitchen right now ready to ship out and I simply don’t want to give it up. It has the perfect tilt to it so your cookbook pages don’t flip on their own (a MAJOR pet peeve of mine). As I went through the entire Uncommon Goods website, I found so many unusual and amazing gift ideas! I have a hard time finding gifts for my husband, he is impossible to shop for but I already found numerous items I pinned immediately to go back and buy. I also found great gift ideas for my friends who are Wine Lovers and lots of great gift ideas for the ladies on my list.  But back to the cookbook stand, did I mention how gorgeous this is?

I am going back to the classics. Great stuff you will make on family dinner night, or maybe you will just make for your boyfriend (or girlfriend). We all know the saying the way to man’s heart is through his stomach and I think they were talking about spaghetti and meatballs when “they” said that. Really, I do. I made pasta for my husband while we were dating and we ended up married. True story. I am laughing as I write this because I am in a silly mood but I really did make him pasta and he loved it! He is very cute but that is an entirely different story I will have to tell you about sometime.

Okay, onwards! We have all heard about someone’s spaghetti and meatball recipe being THE BEST and then we try it an it doesn’t quite measure up. This one measures up- it’s the best spaghetti and meatball recipe, really!

Who  doesn’t love a big plate of spaghetti and meatballs? I remember as a kid going to the Old Spaghetti Factory and getting a big piping hot plate of  cheesy spaghetti, meatballs and garlic bread, it was always a memorable night (I am still talking about it, aren’t I?)

This is the perfect Sunday night dinner and so easy to make. The meatballs are tender and flavorful, the sauce is thick and rich…yum, yum and YUM!! Make this ASAP.

This is my childhood favorite sandwich that I still have a love for….a delicious mashup of marshmallow fluff, apples, bananas and peanut butter, all grilled into a melty gooey “mess” of a sandwich. The only thing that could make this better maybe is some…wait for it…bacon (you guessed it)! But I decided to go “vegetarian” on this one and stay true to what I ate as a kid. As my daughter would say, this Grilled Banana and Apple Fluffernutter is “totes” yummy.

So football has come and gone :-( but that doesn’t mean we can use some of that game day food for other parties (plus baseball’s around the corner!)!

Here is a table I just put together for a television segment on Super Bowl decor and food- the table is filled with awesome game day ideas which could translate into other yummy party food:

My Buffalo Chicken Lollipops with Blue Cheese Fondue are CRAZY good, I might just have to make these for all occasions, not just football. I’m sure I can find some appropriate moments that could include these delicious bites of crispy, juicy, spicy goodness. The blue cheese fondue is MILD, which I like- and it takes the bite off the spiciness of the buffalo sauce.

 

Most every game day party I’ve been to has included pizza…I really wanted to try something different here but still get my cheesy, zesty pepperoni fix. I thought arancini would be the perfect answer- the crispy outside of these little risotto balls hold the cheesy goodness of the pizza inside!  I made two versions of pizza arancini…of course we need “The Works” and then I tried a simpler version, Sausage and Caramelized Cipollini Onion. Chipollinis are sweet and caramelize quite nicely, making for a sweet and savory combo with sausage and cheese.

Check out my “Ultimate Guys’” dessert: Maple Bacon Mini Football Cakes…sounds crazy but it’s delicious!! They really taste like maple pancakes with bacon (and of course a little chocolate thrown in there! trust me- the flavors work!).

 

Who doesn’t love a good spinach artichoke dip? And potato skins? I combine the two here for this delicious game-day treat! Spinach and Artichoke Potato Skins:

 

Mini Clam Chowder Bites are a great way to celebrate San Francisco by making one of their signature dishes into a mini appetizer bite. These are fun and easy!

These Grilled Mini Reubens are my mom’s recipe, they are bursting with flavor! They’re crispy, cheesy and delicious- the sauce is the perfect dip, what a great sandwich!

 

I made these for the Super Bowl and they are so great for a Sunday daytime party… Creole Grilled Shrimp Bloody Marys…spicy and delicious!

 

 

My Crab Cake Lollipops with Lemongrass Aioli were featured in People for the Super Bowl this year and I have been told they are some of the best crab cakes people have tasted…and these are perfect party size!

Yes, I really just did this. And then I ate it and it was spectacular! What a way to use left-overs, holy guacamole! This was super easy to make and so colorful and pretty, a winner all-around.

When I was a kid I would put cranberry sauce on everything…my husband doesn’t love it so I stopped making cranberry sauce for awhile…but boy is it back in a big way. My hubby ended up devouring this Turkey, Pesto and Cranberry Melt sandwich to my complete surprise. You MUST make this after Turkey Day and let me know how it turns out!

Short Rib Fever Week continues with my recipe for Short Rib and Ricotta Gnocchi.

Short rib. Gnocchi. Rich sauce that you want to lick off the bowl when you are finished. Need I say more?? I always order gnocchi on any menu that has it, I absolutely love gnocchi but I have had some melt-in-your-mouth versions and some dreadful, awful, chewy and rubbery versions. This one is GOOD. And EASY. This entire recipe should stay in your file for a really, really good meal. The rich sauce, tender short rib and pillow-soft gnocchi are so flavorful and yummy, you might just have seconds! Gnocchi is really intimidating if you have never done it before but it actually is very easy when made with ricotta. I used to boil potatoes to make potato gnocchi and really had to learn how to NOT end up with lumpy, tough or starchy gnocchi (now I bake the potatoes, use a ricer and don’t over-mix them), but this ricotta version is so much easier and will have you wondering why you haven’t made it before!

How cute are these things??? I have seen the mummy hotdogs everywhere  but never wanted to make them because I don’t love to give my daughter hotdogs…so we jumped in the test kitchen and came up with these adorable little frights.  Who doesn’t love a good chicken tender?? Then add some buttery crescent dough and OMG. Believe me, you won’t be able to keep these Mummy Chicken Tender Wraps on the tray at any Halloween gathering.

It seems every home cook has their own way that ribs MUST be cooked– my friend’s husband boils baby back ribs in coke for hours. He does a lot of other stuff but that is what really stuck with me because it is so weird to see these ribs boiling in Coke– I couldn’t help but obsess over his process until they were done. They are very good but I swear he boiled those ribs for something like 6 hours!! This recipe is very different. We ARE using Coke but there will be no boiling here…and we are using short ribs. These Coke-Braised Short Rib Tacos are inspired by all the taco trucks I visited in my lifetime growing up in Southern California…

Have you tried Kimchi? When I first heard of it I was like, “kim-who?”, but now I am very familiar with this yummy spicy fermented cabbage and vegetables. You see Kimchi thrown on all kinds of things on food trucks and I am throwing it on a Korean Cheesesteak…why you ask? Why not! You can make your own Kimchi but it takes many days to a week to ferment. To skip the long process you can buy it at most stores these days in the international aisle. If you have the time, make it yourself and keep in the refrigerator to us on all kind of things.

The flavorful korean beef and provolone are a perfect combo with kimchi- try it and you will see how fantastic these Kimchi Korean Cheesesteak Sandwiches are!

I am a BIG food truck fan, you find food from these kitchens on wheels that you wouldn’t find anywhere else. We are not talking the food trucks of yesteryear (yes, I just said yesteryear, I have turned into my parents)…some of these food trucks you see these days are innovators of cuisine–mashing up flavors from around the world that you would never imagine together, like kimchi in a burrito. Who would’ve thought that people would line up blocks away to get their hands on these creative creations? Well, they do. And I am one of those people.

Whenever I eat something creative like this I am left to wonder…”How can I make this at home?”. Where are these food truck recipes? The answer is nowhere really…so I went to work putting together a list of foods I would make if I had my own food truck (don’t think I didn’t seriously consider this for a minute… wrapped with “The Hopeless Housewife” logo all over it and me in my apron cooking up fun foods inside…then I came back to reality). I decided to have a week-long series with food truck inspired recipes of my own.

I am starting my Food Truck Frenzy week with something I could eat everyday. It’s a spin on Fried Chicken and Waffles…but with Korean Fried Chicken and mini waffles that fit on a skewer…(meat on a stick!). Get ready to be wowed with these Korean Fried Chicken and Waffle Skewers…do yourself a favor and skip making homemade waffles and use a mix (although I did include a yummy waffle recipe if you are in the mood to cook that much). The Korean Fried Chicken is really the star here…it’s tender, crispy, sweet and spicy. Serve with butter and syrup for the waffles and you have yourself some fun party food your guests will not soon forget!

Wouldn’t this be an incredible set to own? The answer is YES, yes it would!  These are my favorite things that Le Creuset makes. I love slow-cooking in their gorgeous Oval Dutch Ovens and searing steaks, chicken and fish on their Grill Pan– that pan gets nice and hot and SEARS away to make the most delicious meats! And let’s not even TALK about the saucepan…okay, I lied, I’m talking about it– the saucepan makes incredible sauces because the heat is so evenly distributed and the enamel is non-stick.

What would you make on these gorgeous pieces? I already have so many things I am inspired to make just by looking at this incredible cookware.

I would rather eat an old shoe than try to gnaw on a bad short rib. Now I can make them in my sleep practically and I think that’s why I was thinking up this recipe while I was dozing off.

I have a serious love for short ribs so I am testing it every which way, upside down, backwards and forwards. This one was easy. I used the braising liquid over the dough and it sure makes for a delicious sauce. The different cheeses all compliment each other and it turns out that yummy melted brie is divine with short ribs! Then for a little sweetness I tossed on some caramelized onions…oh BABY!  Plan ahead if you’re making this- toss the short ribs in earlier in the day so they’re nice and tender and delicious when you go to make the pizza. Oh! And also, let the pizza dough rise even if it doesn’t say it on the package (see below)

I am continuing Short Rib Fever Week with a DELICIOUS version of short ribs. Oh, baby these are good. I never would have thought I could put both red wine AND cola into a braised short rib but, let me say- YES, yes you can. I also use this version of short rib for my Short Rib Lettuce Wraps. I made the lettuce wraps for a gathering last month and see below what I wrote about them then…

“My friends were kind of freaking out over them (this is no exaggeration)…it wasn’t one of those “Oh, Erika. These are lovely” and smile kind of thing (my friends aren’t exactly the “oh this is lovely” type anyway :-) ). This was an “Oh my God these are insane” type of thing.  The truth is, I just started throwing things in the dutch oven (I never thought Coke and red wine would work in a dish but it does here). I’m not trying to brag or anything but this recipe is really darned good. :-) ” -me back in September. Trust me, you need to try these short ribs!

I just basically turned the lettuce wraps into Cola-Braised Short Rib Sliders, adding slaw and red onion…let me know how they turn out!

It’s getting really cozy around here. There’s a slight chill in the air and I am wearing big, puffy socks around the house and pulling out my Dutch oven to make some warm comfort food. I love filling the house with that yummy smell of something slow-cooking in the oven for hours. Which brings me to short ribs. I love me some good short ribs and I REALLY know how to cook these babies to perfection– tender and flavorful with just enough sauce to cover a good mashed potato…

This week I will be posting my best short rib recipes; from gnocchi and lasagna to a good old-fashioned braised short rib. I have had such great feedback on these recipes, it’s time to dedicate a week to them!

I am starting off with one of my favorites. Bourbon and Coke Short Ribs. 

These short ribs have become my go-to recipe for an incredibly flavorful and tender short rib. My husband’s favorite drink is Jack Daniels and Coke which got me thinking that might really make a great braising liquid and boy was I right. I am not a Coke drinker (or any other soda for that matter) but in this recipe it sure does taste good…

 If I had to pick one thing I to eat everyday for the rest of my life it could just very well be a taco. Seriously, this is like the perfect meal wrapped up in a delicious corn tortilla.  You have your protein, veggies, dairy and starches all covered. Beef, chicken, fish, veggie, pork tacos…I love them all. And THESE Beer-Braised Pulled Pork Tacos are to die for. The pulled pork is melt-in-your-mouth tender and SO flavorful (and really easy to make- you just need some time for it to get tender in the oven). The crunchy slaw, cool guacamole and tangy pico de gallo round out this perfect taco!

Halloween Party Table Plus Free Printables The Hopeless Housewife

 

Boo! I love Halloweens so much, I can’t even take it. I also can’t even take this fun Halloween table we have been busy working on!  This was SO much fun to put together and I had to work hard to keep my daughter and friends from sneaking some of the sweets before I had a chance to photograph it.

This Haunted Mansion Graveyard Halloween party table is a little scary at first but then you see cute little mummy googly eyes, adorable bats and cutie little ghosts looking at you and how could the little ones be scared?  We also are offering the printables that are on this table free to download below. They include cupcake wrappers, cupcake toppers, water bottle labels, food labels, straw flags and more.

I wanted to keep the color scheme monochromatic with a pop of orange here and there to make this table really stand out.

I thought I would take a break from all the meat I have been posting (although this dish would be a great side with any kind of meat!). I love all veggies and don’t really need a big glob of cheese or heavy sauce on them for me to like them– oh don’t get me wrong, I don’t mind a big glob of cheese or sauce most of the time…but this Meyer lemon mascarpone is really light and creamy- not heavy at all– and so easy to make.

My good friend Dawn has a Meyer lemon tree and she is always trying to pass Meyers off as true lemons :-) to me when we are cooking together which I quickly tell her “no!”. It’s not that I don’t love them, they just aren’t as tart and acidic as a true lemon and they are definitely sweeter and more fragrant (makes sense since they are a cross between a lemon and an orange)…to me in cooking it’s a very different animal. This Pan-Roasted Asparagus with Meyer Lemon Mascarpone is the kind of thing Meyer lemons belong in…their fragrance and sweetness is perfect to add to the creamy and sweet cousin to cream cheese, mascarpone.

I used to cook risotto until it was a starchy lump of glue until I learned the proper way from a great chef in my 20′s. Regardless of the fact it could hold together any schoolgirl’s craft project, my friends and I would still eat it up like we’ve just been served the finest dish at Windsor Castle. No, no… I learned a good risotto should not be cooked to oblivion and boy did that change things. It took a couple of tries to get that perfect al denté down but it makes such a difference.

I love risotto for breakfast, lunch or dinner. Now I try tossing whatever I can to see what works together and this Roasted Corn and Cherry Tomato Risotto with Brown Butter does just that. It’s great because the crunchy sweet corn and cherry tomatoes really give it some dimension and added flavor. Add that brown butter over the top and mmm mmm this one’s a winner!

I love spicy foods and that just may be why I polish of a plate of hot wings in a few minutes flat while my husband sits with his jaw open in shock. Try and tell me burrata is not the most luscious, buttery, silky cheese on the planet. Oh my….give me a plate of this spectacular delight and it is gone in minutes. Out of all the wonderful things about burrata, the fact that you don’t have to do much to it to serve up an amazing dish is also a huge plus. If you aren’t familiar with it, I suggest you find a store in your area that has it and try some…fast! It’s fresh mozzarella on the outside and mozzarella mixed with cream and tied up in a nice little ball.  You are going to love this Burrata with Pan-Roasted Butternut Squash and Figs.

I always get cucumber rolls whenever we are out to sushi, and I thought I could attempt something similar here using prosciutto, brie and different melons.  These adorable Prosciutto “Sushi” Rolls with Melon and Brie are so cute and fun…and best yet they are delicious!! Oh, baby. Make this for brunch, make this for dessert, it’s divine! It’s like a yummy, gooey, eggy apple and pear tart with salted bourbon caramel  drizzled all over it. I’d even put ice cream on it if this were my dessert. Trick to the caramel: DON’T STIR! You will end up with a crystalized mess of sugar to scrape out of your pan. If you follow this rule, it’s actually very easy to make. I store mine in mason jars and pour it all over ice cream any chance I get… so if this sounds like you, double the caramel recipe and toss the extra in the fridge for later!

 This wild mushroom pasta is really easy to make and VERY flavorful. I am a mushroom fanatic so this is right up my alley. Some of the mushrooms can be found dried in the produce or asian foods section if not fresh and can easily be rehydrated when soaked in hot water. I love the combination of mushrooms I included in this recipe but they all can be substituted out for other mushrooms if you’re having a tough time finding these. If you are rehydrating, you will need much less in weight than what the recipe calls for; read the directions on the package for how much weight they will be when hydrated.

Short rib. Gnocchi. Rich sauce that you want to lick off the bowl when you are finished. Need I say more?? I always order gnocchi on any menu that has it, I absolutely love gnocchi but I have had some melt-in-your-mouth versions and some dreadful, awful, chewy and rubbery versions. This one is GOOD. And EASY. This entire recipe should stay in your file for a really, really good meal. The rich sauce, tender short rib and pillow-soft gnocchi are so flavorful and yummy, you might just have seconds! Gnocchi is really intimidating if you have never done it before but it actually is very easy when made with ricotta. I used to boil potatoes to make potato gnocchi and really had to learn how to NOT end up with lumpy, tough or starchy gnocchi (now I bake the potatoes, use a ricer and don’t over-mix them), but this ricotta version is so much easier and will have you wondering why you haven’t made it before!

Creamed corn has been one of my favorite things to eat since I was a kid. I didn’t get this version though, I ate the one that came from a can and was NOWHERE near as good as a homemade version (thanks, mom! :-) ). I roast the corn to give it some extra dimension then  the jalapeño adds great flavor along with some heat. If you are not a fan of spicy foods, omit the seeds. If you are a spicy tamale like me, then heat it up with more of the jalapeño seeds. Serve this Jalapeño Creamed Corn with a yummy steak or chicken and you will have some happy tummies in your hands at your house. Enjoy! xE

I love a great risotto and this recipe came to me in the middle of the night- I love the sweet carrots, tangy manchego cheese and the spice from the sauce. The brown butter gives it a little warmth. This Carrot and Manchego Risotto is so wonderful as a starter, main or side dish- so versatile!

Okay, wow. I just devoured this S’mores Ice Cream Sandwich. Seriously YUMMY and so EASY. And such a fun after school treat for kids.

Summer may be on its way out, but that doesn’t mean you can’t enjoy this camp cookout treat that every child dreams about. My daughter begs all summer to make these and comes away with marshmallow goo on her clothes, hair, face– you name it. Now I guess we’ll add ice cream to that gooey mix on the front of her shirt!

No campfire needed for this concoction (although I suppose you could torch it with a creme brulee torch if you wanted that toasted flavor).

Strawberries and balsamic vinegar are a match made in heaven. Add basil to the mix and it really kicks things up a notch! I combine all these flavors along with shortcake to make a perfect dessert. You are going to love these Sweet Potato Grits with Maple Butter and Bacon! I live by the motto “everything is better with bacon” and these grits are proof that’s true! Now my new motto is “everything is better with maple butter”…this stuff is unbelievably delicious and so addictive.  It tastes like buttery maple candy but not too sweet, and it melts on your pancakes, waffles, toast and yes….even grits to make it even more incredible. I have a batch in my refrigerator just waiting to be spread on something and it seems to call out at me every time I open the fridge door!

Okay, enough about the maple butter and bacon, let’s talk grits. Creamy, cheesy, sweet and savory grits- I love them all…but I have to say my new favorite way to eat them is with sweet potatoes. Sweet potatoes are also packed with vitamin A and other nutrients so that is also a good excuse to add them into the mix.

These Maple Bacon Baked Beans are tangy, sweet and savory…so delicious and a cookout MUST! I put mine in individual cups and spoons. Canned navy beans can be substituted to save time and effort, you will just skip the overnight soaking and will not need to cook in the oven as long.

Nothing says summer like a good old fashioned cookout- it’s one of my favorite things to do!  There’s just something about the smell of the grill that can get neighbors you hadn’t heard from in awhile knocking at our door to join in on the fun. Just like Yogi the Bear following his nose to where the good food is. I know if I smell someone in the neighborhood grilling, I instantly want to fire up our grill.  Of course with a cookout comes the classics; burgers, baked beans, potato salad, corn on the cob, watermelon… and strawberry shortcake. These short ribs have become my go-to recipe for an incredibly flavorful and tender short rib. My husband’s favorite drink is Jack Daniels and Coke which got me thinking that might really make a great braising liquid and boy was I right. I am not a Coke drinker (or any other soda for that matter) but in this recipe it sure does taste good.  Give these Bourbon and Coke Short Ribs a try for your next special dinner!

This is my friend Pauline’s famous and incredibly simple Honey Crisp Pie- it’s light and fresh and so delicious! Whenever she makes it, it disappears instantly! The secret is to use really good apples and to not overcook the pie! She doesn’t use any spices and that lets the apple flavor shine though.

“It’s baseball season and once again life is good.” I have heard this many times by die-hard baseball fans..I have some experience here because my husband has been in baseball nearly his whole life- little league, high school baseball, college ball and the big leagues. Growing up, Easter was always a big deal in our house. My sister and I would race around trying to find the most eggs…she would put all the smashed eggs in my basket and run to find the best basket first, then relentlessly tease me about how hers was so much better.  Ahhh, it’s great to be the younger sister! :-) Now that we are older and both have daughters, it’s fun to dress them in Easter dresses and watch them battle it out for the eggs!

This Easter sweets table is a true labor of love. It took a bit of time to put together, but it really was fun coming up with ideas for this fun, bright and whimsical wonderland for the kids.

I don’t know why, but I really love creamy polenta. I love the taste and the texture and I love trying new ways to eat it. The flavorful wild mushrooms and cool, creamy  and slightly sweet mascarpone are really a great combination with the warm, creamy polenta.  It’s such a nice side dish and nice way to switch up those ho-hum sides that always seem to come to mind when I plan for dinner.

It’s a nice change from the typical pasta and sure to be a crowd-pleaser at your house! If cooking for the kids, add the chipotles slowly, making sure the heat is not too much for them.

I had a lot of fun making some Irish food and green desserts over the last few days and I had to work hard to keep little fingers out of the desserts before the pictures were taken. As soon as I was done they were GONE!

I made my first Irish dish using my beautiful Le Creuset French Oven. See the bottom of this post so you can enter to win one for yourself!! My Guinness Corned Beef and Cabbage  is a classic dish with the Irish Stout to make the broth richer. Corned beef is quite salty so I pull out most of the braising liquid and finish it off in the oven with a brown sugar crust and cloves, delicious!!

These cute little Beef and Guinness Shamrock Bites are easy and really yummy, set put a tray of these and they’ll disappear this St. Paddy’s Day!

 

I am IN LOVE WITH my Butter Mint Chocolate Push Pops…I put them in a foam brick and covered it with moss to almost make them look like little trees in a forest…a fun way to have green on this special day! The light a buttery butter mint filling is the perfect compliment to the moist, rich brownies inside the pops…YUM, YUM, YUM…watch out, these are DANGEROUS!

 

I set up these Green Velvet Cake Pops in a cauldron we had for Halloween, put foam in the center and arranged the cake pops, so filler then the coins that I found at Party City- really simple and SO festive! The cake pops are decorated with green edible glitter, mini shamrocks and green sprinkles…

 

A great way to have green but not go too crazy with the green food coloring is to use pistachios! My Pistachio Cream-Filled Whoopie Pies are really cute and a flash-back to my childhood.

The Super Bowl is around the corner! This means my house will be booming with cheers and jeers, plenty of beer, lucky jerseys…and of course FOOD! (funny side note; when I met my husband, he told me he wasn’t one of those guys who sat around watching football all the time. Cut to a year later. Lucky San Diego Chargers jersey: ON. Football on every channel possible: ON. Remote control: IN HAND AT ALL TIMES TO TOGGLE BACK AND FORTH BETWEEN STATIONS. I guess it’s only fair, I pretended to love working out when I met him…cut to a year later: I hadn’t seen a pair of workout shoes for months and I hadn’t even tried looking. Years later now this is always a good source of humor… especially during football season) Football is such a great excuse to eat fried food, cheesy appetizers, creamy dips and all the yummy food I try to stay away from most of the year! Blue Cheese and Chive Souffle in Onion Cups

Yield: Serves 6

Ingredients:

4 – 6 large sweet onions (such as Vidalia) *
5 egg whites
4 egg yolks
3 tbsp butter
3 tbsp all purpose flour
1.25 cups milk
2 tsp dried oregano
1.5 tsp dried mustard powder
small handful fresh chives (2 tbsp finely chopped)
1/2 cup crumbled blue cheese **
salt and pepper
* The souffle is enough to comfortably fill 6 large vidalia onions. However, if you have some guests coming over that have less of an allium affinity, give them an out by making two portions in 8 oz ramekins or a single 16 oz ramekin (which will cook at the same speed as the onions).
** Surprise! I LOVE CHEESE!!! I love lots of ooey gooey melty delicious cheese, but I equally love smaller amounts of piquant cheese with flavors that blossom in your mouth like a serenade of fermentation. What I’m trying to say is that when you’re singing the blues, it can be easy to hit the wrong key. The flavor of blue cheese is quite strong and really makes or breaks this dish, so choose a blue that you really enjoy. I opted for a classic Roquefort, but if you wanted a milder flavor Gorgonzola would be great, or even the succulent and creamy Bresse de Bleu.

Instructions:

Preheat your oven to 350ºF.
Thinly slice 1/4″ off the root end of your onions, and about 3/4″ off the top. Peel back the tough outer layers of your onions until you’re at the thick and supple edible layers.
Boil the onions in salted water for 4-6 minutes, or until the outermost layer is slightly tender but still firm. Remove the onions with a slotted spoon and cool them in an ice bath.
When the onions are cool enough to handle, gently loosen the outer two layers and press firmly up on the root end to pop the inside of the onion out. Be gentle so that you don’t rip the onion rounds that you need. Slice a thin (1/8″) round of onion off of the base and tuck this inside your onion cup where there is an exposed hole from the root end. Reserve the insides of the onions for another use.
Now then, onto the souffle. Carefully separate your eggs putting the whites in one bowl and the yolks in another.
Melt the butter in a medium sauce pan. As soon as it has melted add the flour and whisk it until it forms a sandy paste. Let this cook, whisking occasionally, for only a minute or two.
Slowly add the milk in a steady stream, whisking constantly as you do so to avoid any lumps and clumps. When the sauce is incorporated and smooth (about 30 seconds of whisking) add the dried mustard, oregano, and season with salt and pepper to taste. Take the sauce off the heat.
Whisk your egg yolks until they’re combined and just slightly lighter in color. Add a spoonful of your bechamel (the cream sauce) to the egg yolks and WHISK, WHISK, WHISK!!! Be vigorous and terse. Take charge of this situation. Don’t let those eggs harden up and make a fool of you.
Repeat this with another 1-2 spoonfuls to temper the egg mixture before whisking in the rest of the sauce.
Beat the egg whites until they form moderately stiff peaks. There are a lot of tips out there about how to get the stiffest of egg whites, such as the temperature of the egg, the copper bowl, blah blah blah. The most important thing in my humble opinion is to make sure that there is absolutely not a speck of protein in the eggs. That means no yolk, and no goobers that didn’t get cleaned off of the inside of the bowl. I always wipe out my bowl (and the beaters) with a cloth doused lightly in vinegar before I commence the beats.
Dollop about 1/3 of the egg white onto the yolk mixture……
…and stir it with a spatula until it is uniformly combined.
At that point you can add the rest of the whites to the yolk, but DON’T STIR!! Just lightly, carefully, fold the mixture over with your spatula. Caress the eggs. They like some TLC. After all, if you stir them you risk losing all of the volume that you just tried so hard to make with the whites. Fluffy egg whites are one main key to a high rising souffle. You don’t need to completely incorporate the whites right now, it’s okay to be a bit streaky.
Crumble in the blue cheese and the finely chopped chives. Fold the mixture over several times until the chives and cheese are interspersed.
Nestle your onion cups into an oven safe dish that is just large enough to fit them all. They should be rather snug so that the onions were to start singing, “Lean on Me” it would just make sense. We all need a bit of support now and again.
Spoon the souffle mixture into your onion cups until it’s just about 1/2″ – 3/4″ down from the rims.
If you’re also using baking some of the souffle without onion cups, butter it well and lightly sprinkle the inside with dry breadcrumbs. Pour the souffle mixture in until it’s 3/4″ down from the rim.
Bake the souffles in the center of your preheated oven for 30-35 minutes or until they’re browned on top and there’s just the teensiest bit of jiggle left in the centers.
Serve the souffles immediately.

This is the recipe that got me on “The Taste” on ABC. It is crispy tuna with a creamy lemongrass and coconut cream sauce and a cool spicy watermelon and mango salad. I was shaking in my boots that the mentors Anthony Bourdain, Nigella Lawson, Brian Malarkey and Ludo Lefebvre wouldn’t like it but they all had great things to say about it (including Anthony Bourdain!). Nigella particularly liked the panko crispiness on the tuna and the “heat” on watermelon salad.  Give this Lime and Corainder-Crusted Tuna a try and let me know what you think!

This is herbal mixology at its best. Peach and basil go so well together and this drink goes down a little TOO easily…watch out! I am a vodka drinker so I substitute vodka for the bourbon and it sure does wet my whistle!

These buttery cookies melt in your mouth and the apricot jam is such a perfect compliment which also makes them chewy in the center, absolutely delicious!

1 pound salted butter

1/2 cup sugar

2 1/2 cups sifted flour

jar of good apricot jam

 

Preheat oven to 300 degrees F.

Pulse butter into food processor until soft and light. Add sugar and continue to pulse until light and fluffy. Add flour and pulse until thoroughly blended and clumpy.

Transfer mixture onto parchment paper and divide dough into 2 balls.

Roll out one ball of dough on a floured surface to less than 1/4″ thick. Using a 2 1/2″ round fluted cookie cutter stamp out 12 rounds, placing them on an ungreased baking sheet. Spoon teaspoon of apricot jam onto rounds and spread to edge, leaving bulk of jam and apricot pieces in the center. Roll out a second ball of dough to same thickness (less than 1/4″). Stamp out 12 more rounds. Using a 1 ” round fluted cookie cutter stamp out center of rounds and remove from center. Carefully lift tops and place over jam cover rounds. Repeat process with leftover dough.

Place baking sheet into oven for 35 minutes. Remove from heat and cool on cookie sheet.

Whichever holiday you celebrate, these moments are about family coming together, and this is a great time to get in the kitchen with the kids!  I just LOVED to help my mother in the kitchen and always thought I could make exactly why she was making, no matter what it was. Clearly there are things kids should and shouldn’t be making in the kitchen, and each child is different. My daughter, Madison has been with me since she was very young in the kitchen and she has picked up a lot of cooking skills- she surprises me daily!  I have to remind her constantly to tie her long hair back when she is close to the stove and I always stay close to keep an eye on her- she reminds me so much of me as a child, wanting to take on the most difficult of tasks to prove she can do it, I recognize this and I always stay close!

Here are my favorite recipes to make with Madison…they  are simple and delicious! We split up duties and I do anything that involves heat or cutting, but the sky’s the limit on everything else!
