These Prosciutto “Sushi” Rolls with Melon and Brie make me smile just looking at them. I Love a good prosciutto and melon…then mix in some creamy brie and roll it up to look like sushi? Totes up my alley!!!
- 6 slices of prosciutto
- 4 ounces of brie, sliced horizontally from the top into long slices (with or without the rind).
- ¼ honeydew melon, sliced into 2-3" long "shoestring" or matchsticks
- ¼ cantaloupe or Tuscan melon, sliced into 2-3" long "shoestring" or matchsticks
- Do these one prosciutto slice at a time. Place prosciutto slice on cutting board lengthwise. Spread out the brie into the the center 3" of the prosciutto and press cheese out to reach the edges of the width of he prosciutto. Add melon "matchsticks to the center (if prosciutto is laying lengthwise in front of you, the "matchsticks" will be vertical). Roll up the sides of the prosciutto the roll over the melon until it form a full "sushi" roll. Slice down the center in half and repeat.
