Uh oh…this could be addictive. It’s another one of my late-night concoctions and it doesn’t disappoint– this festive bowl of Christmas fun was a big hit in my house. And seriously simple. The popcorn is coated with Peppermint Bark then drizzled with chocolate and then sprinkled with crushed candy canes. SO simple.
I think we may just leave some of this Peppermint Bark “Moose Munch” out for Santa this year…
- 2 quarts popped popcorn
- 12 oz white candy melts
- 1½ tsp peppermint extract or ¼ tsp peppermint oil
- 1½ cups semi-sweet chocolate chips
- 7 candy canes, crushed
- In a double boiler, melt the white candy melts, add the peppermint oil, and stir. Toss the popcorn in a bowl with the melted white chocolate mixture. Sprinkle some of the crushed candy cane on top of the white chocolate-coated popcorn. Spread popcorn across a baking sheet.
- In the double boiler, melt the chocolate chips and drizzle it on top of the white chocolate candy cane popcorn, sprinkle the remaining crushed candy cane on top and let the chocolate cool to harden.
