Apple-Stuffed Swedish Pancakes

These pancakes are my favorite- crispy and eggy, so delicious!

Serves 4

 

2 eggs

2 teaspoons vanilla

1/4 teaspoon salt

2 cups whole milk

3 heaping tablepspoons flour

2 granny smith apple, finely diced

3 tablespoons butter

2 tablespoon sugar

butter for cooking

powdered sugar for garnish

 

Serves 4

in a medium-sized bowl, beat eggs with vanilla and salt. and milk and combine well. Whisk in flour, but don’t over-mix, batter will be slightly lumpy. Set aside.

In a small skillet, heat apples, butter and sugar over medium heat. Bring to a bubble and cook until apples are tender. Lower heat to low and start cooking Swedish Pancakes.

Heat  a small pat of butter in a small nonstick skillet until it sizzles. Add about 1/4 cup of the mixture and tilt pan  to coat evenly. Cook until golden brown, about 2 minutes per side. Spoon small amount of apple mixture in the center  and roll pancake up. Sprinkle with powdered sugar and serve with jam if you wish!
